A Grain That's Changing Agriculture
Kernza isn't just another grain — it's a potential revolution in how we grow food. Developed by The Land Institute in Salina, Kansas (just 25 miles from our distillery), Kernza is a perennial wheat variety that challenges everything we know about modern grain farming.
Annual vs. Perennial: Why It Matters
Traditional wheat, corn, and other grain crops are annuals — they must be planted, grown, harvested, and replanted every single year. This cycle exposes bare soil to erosion, requires annual tilling, and demands significant water and chemical inputs.
Kernza is a perennial. Plant it once, and it grows back year after year. Its root system extends over 10 feet into the ground — compared to annual wheat's 3-4 foot roots.
Environmental Benefits
Kernza's deep root system provides remarkable environmental advantages:
- Prevents soil erosion — the permanent root network holds soil in place year-round
- Sequesters carbon — deep roots store carbon in the soil, helping combat climate change
- Reduces water usage — deep roots access water that shallow-rooted crops can't reach
- Minimizes chemical inputs — perennial growth reduces the need for herbicides and fertilizers
- Supports wildlife — year-round ground cover provides habitat for pollinators and other species
From Kansas Soil to Kansas Whiskey
It's no coincidence that the world's most innovative grain and one of its most unique whiskeys share the same Kansas origin. Our proximity to The Land Institute gives us access to high-quality Kernza and a connection to the researchers who continue to develop the grain.
When you sip our Kernza Whiskey, you're tasting a spirit that could only come from this specific intersection of Kansas agriculture, environmental innovation, and craft distilling.
The Flavor of Innovation
Kernza produces a whiskey that's genuinely unlike anything else. The grain's unique composition gives the spirit an earthy, herbal quality with hints of honey and dried grass. It's a whiskey that makes you think — about where your food comes from, how it's grown, and what the future of agriculture might look like.
We recommend tasting it neat, at least for your first sip. Let the complex flavors unfold without the distraction of ice or mixers.
